Last week was a surprisingly good week for me when it came to cooking. Other than the fact that I AGAIN forgot certain ingredients, everything turned out so yummy and the presentation wasn’t half bad!
Sometimes I just don’t feel like cooking, even though I love it. Especially when I wait until after work on Monday to go grocery shopping and then still have to come home and cook. Blah.
This meal is perfect for those nights.
I will say, the egg was the hardest part for me. I could NOT get it to cook in the broth! I wound up having to microwave it in my bowl to get it to cook.
This recipe was great! It says it makes 4 servings, but DJ and I were eating on this for THREE days! I might break break it down to 2 servings next time. Also, to make sure we got our veggies in, we blended and added cabbage. Tasteless addition, but healthier.
My only suggestion on this one is to add the cheese after pouring it in your bowl instead of adding cheese in the pot. That way everyone can choose how much (if any) they want. Plus, cleaning melted cheese from a pot is not fun.
I didn’t really love this one. I think it was the flavor of the beer. DJ did like it, so I will make it again. I used Stubb’s Sticky Sweet BBQ sauce and Shiner Beer. I think next time I’ll try it with root beer! Mmm.
(P.S. Don’t try to skimp on the chicken just because it seems like too much. I cut it into 4 large chicken breasts and after it was cooked it didn’t seem like there was enough.)
For a healthier option, this one is tasty. The sauce was yummy, although I might do a little more soy sauce next time.
We put this one on top of white rice.
This was judged the absolute WINNER for the week. It was by far my favorite dish! Maybe out of everything I’ve ever cooked! And that’s not just because I’m biased towards salmon, but the sauce… to die for!
DJ and I were both literally licking our plates.
